In order to retain vibrant fruit and natural freshness, the winemakers at Lapostolle use gentle extraction methods, wild yeast, and minimal intervention. Aging for 12 months in French oak barrels brings a touch of oak along with beautifully integrating fruit and textural complexity.

Apalta
While it doesn't have the dramatic Andean scenery of other Chilean wine regions, Apalta's hot scrubby hills produce some seriously full-flavored red wines. These French-influenced Syrah and Carménère are becoming highly sought-after wines. Chile is famous for using Carménère as a single varietal, and in Apalta this lesser-known grape comes into its own. Subtle floral notes and refreshing acidity complement the typical flavors of black plum, raspberry and paprika. The Bordeaux-style blends are worth discovering, too, with classic notes of blackcurrant, mint and clove. It is easy to see why some of Chile's most famous wine producers have based themselves in Apalta.

Apalta
