This prestigious "Gavi dei Gavi – La Scolca" is obtained with the utmost respect for nature, from pruning to harvesting. With a strict and rigorous selection conducted with the utmost care, cluster by cluster, in vineyards over sixty years of age, they get unique grapes. Under the watchful guidance of a master applying the old rules of vinification in the winery, refined over eighty years of family tradition, Gavi's unsurpassed style is born, a paragon of the style. The quality is manifested by the fragrance and flavor of live, intense character, harmonious and balanced, offers a surprising freshness and integrity. The wine has notes of flint, almond, and hazelnut that will develop over time.

In the 1980s, Gavi was the poster child for Italian white wines. While other whites like Pinot Grigio and big bold reds have become more popular in the years since then, Gavi has not broken its stride. Local producers continue to make fantastic versions of its crisp, easy-to-drink white wine. These light-bodied and zingy wines are mainly made from the local Cortese grape, grown at high altitudes in southern Piedmont. The sea breezes and cool hilltop temperatures here help to keep the acidity in the grapes, which brings about crisply refreshing wines that are fruit-forward and bursting with flavors of ripe citrus, green apple and pear. The DOCG (Denominazione di Origine Controllata e Garantita) classification is the top tier for Italian wine classifications. It controls production methods and wine quality. Strict rules oversee the production of DOCG designated wines, including allowed varietals, winemaking procedures, barrel and bottle aging methods, grape ripeness and limits on grape yields during harvest. DOCG wines are also required to be officially tasted. DOCG bottles have numbered government seals across the neck of the bottle to prevent forgery.

The Gavi wine made from the Cortese grape was actually invented at La Scolca in the 1950s. It has since become a classic. All the vineyards are in the best sites of Rovereto di Gavi. Sea air, full sunlight exposure from sunrise to sunset, coolness, and minimal dews. All of these elements create the proper alternating conditions that are ideal for a complete and correct ripening of the grapes, a prerequisite for a good wine. The past and the future live together at La Scolca: the naturalness of those who have always been is combined with the vim and vigor of forward-looking leaders. The surname Soldati "soldiers" is particularly symbolic of the approach taken by the company's owners. The name of the property, as well, is symbolic. La Scolca comes from "Sfurca" or "Look off into the distance," and the farmhouse that stood there was exactly that — a lookout post. These names reflect the proud and tenacious character of the owners and their wines.
