Don Ercilla
Valle Central, Chile
Dark fruit flavors and soft tannins come through in this Chilean Cabernet Sauvignon
ABOUT THIS WINE:
Don Ercilla
Cabernet Sauvignon
This Cabernet Sauvignon hails from the beautiful and vast Valle Central in Chile. The region is one of the largest wine-growing regions in the Southern Hemisphere, stretching almost 250 miles long. Fruit used for this wine was picked during the cooler parts of the night to keep temperatures low. After the pick, berries were cold soaked on the skins for 3-5 days which encouraged a soft and slow extraction of flavor and color. This is an approachable and friendly wine with rich, opulent texture and sweet dark fruit flavors. Soft tannins come forward on the back end. Easy to sip on its own or perfect to pair with meaty umami flavors like steak or mushrooms.

WINE REGION:
Valle Central
The expansive, warm flatlands of Chile's Valle Central are home to most of the country's vineyards. This long stretch of land from Santiago to Itata Valley is divided into four sub-regions, each with its own climate and reputation. There is Maipo Valley with its minty Cabernet Sauvignon, Rapel Valley with its spicy Carménère and the Curicó and Maule Valleys, famous for concentrated Carignan made from old vines. Throughout the valley—which is prized for its rich, volcanic soils—the hot days and cool nights result in ripe, well-balanced grapes. Some of the most common Valle Central wines are fruit-forward reds made from plummy Merlot and pear-flavored whites crafted from Chardonnay.

ABOUT THE BRAND:
Don Ercilla
In the mid-1500s, Alonso de Ercilla wrote “La Araucana.” This epic poem is a first-hand fictionalized account of the long-running conflict between colonial Spaniards and the Mapuche people of Chile, in which Ercilla portrays the native Araucanians as the champions. This literary work has become a national symbol of heroism and pride in Chile. At Don Ercilla, we too pay homage to the people, the culture, and the land worth fighting for. Working in the historic Maule Valley, it is our passion to craft wines that reflect Chile's character, unforgettable stories, and passion for life.
